Microwave Peanut Brittle

[Microwaves vary in power, so probably the best procedure is start timing at low end then add. Once you have the formula, it's very easy.]

In a 1 1/2 qt casserole stir together:
1 cup sugar
1/2 cup white corn syrup
Microwave on high for 3 minutes [for my microwave]
   
Stir in 1 cup roasted, salted peanuts.
Microwave on high for 3 - 5 minutes (until light brown) [ I do mine for 2 mins.]
 
Add 1 tsp butter
1 tsp vanilla extract
Stir in until well blended.
Microwave 1 - 2 minutes more  [I do mine 1 min.] Peanuts will be lightly browned and syrup very hot.

Remove from microwave and add
1 teaspoon baking soda
Gently stir until light and foamy

Pour mixture onto lightly greased baking sheet. Let cool 1/2 to 1 hour.  When cool, break into small pieces and store in airtight container.
